Quick and easy recipe: Garden Salad Pasta

This week we shared a quick video on Instagram of something we call garden salad pasta. It’s basically a really quick dinner involving homegrown food like tomatoes, basil and garlic. It’s so easy that you don’t even need to measure anything and the only thing you cook is the pasta.
It goes like this.

Ingredients

  • Lots of tomatoes – all different types
  • Garlic – raw – 6 cloves (we love our garlic but you could reduce this)
  • fresh basil – a handful of shredded leaves
  • olive oil – 6 tablespoons
  • spaghetti cooked

How to make it

It’s really simple. Honestly, there’s nothing to it.

  1. Cut up your tomatoes into bite-sized pieces, these are the main thing in this dish so if you have lots of colours then it really makes it look amazing. Flavour-wise it doesn’t matter which tomatoes you choose as long as they are tasty but we’ve cherry tomatoes are the easiest to use in this cause they need the least amount of chopping and hold their shape well. Then put these in a big bowl.
  2. Next, mince the garlic, or grate it if this is easier. We grate it just for speed and convenience and then add to the bowl of tomatoes and add about 6 tablespoons of oil. Again like everything you judge the amount you can use less if you want.
  3. Give that all a good mix and cover and set aside until your pasta is ready. This gives it time to let all those flavours mingle.
  4. Cook some spaghetti and then mix the garlicky tomato goodness through it.
  5. Add your basil and some seasoning to taste… and serve.

Don’t be put off by the idea of the raw garlic, it’s not actually as overpowering as you think, it’s more of a warm hum when added to the tomatoes and basil.

Serve with a nice glass of chilled white wine in the garden.
